Alas, no photo credit on the back of either LP, but one is in a bullring that looks quite 'South Of The Border'

Could be Tijuana given its proximity to LA. There were a quite a number of movie and TV sets in and around LA / So Cal., as well as places like Tucson, which used western 1800's and Spanish architecture backdrops and were used for ads, travel posters and so on in addition to movies & TV. Did I mention those beautiful old photogenic 18th century Spanish missions in California as well?
I didn't see this posted so i'll have a go... I believe this is the current location of the CSN album cover shot. Roughly Palm Ave & Santa Monica Blvd. Uploaded with ImageShack.us
In Under The Covers, a documentary about the Henry Diltz/Gary Burden partnership, Henry and Gary visit this site with David Crosby and point out the location where the picture was taken. Under The Covers This is a great DVD concerning this exact subject with in-depth stories behind albums by The Eagles, Steppenwolf, Richard Pryor, The Doors, America and Jackson Browne - highly recommended!
Cool! I'll definitely be on the lookout for the DVD (A wee bit pricey on Amazon) Thanks for the heads up!

Not an album cover, but a famous recording studio. The original location of Ardent studios in on National Street in Memphis from 1966 to 1972. Where Led Zeppelin, Big Star, Issac Hayes, Staple Singers recorded. Across the street was a Big Star Supermarket. In 1972 the studio moved to its current location on Madison Avenue. Here's what it looked like in the late 60's and what the same building looks like now... I always thought about stopping in there next time I'm in Memphis, but don't know how safe the surrounding area is.
