It's amazing that there has been no other threads on this subject. How is the quality of these discs?

Well, there was one thread:
http://www.stevehoffman.tv/forums/showthread.php?t=43320 but I think that was the only one recently, and there wasn't much said after it came out. The quality is absolutely great, and it's terrific to finally see the full length versions of these. I saw the majority of the show in syndication with a couple of minutes edited out of each episode (shows have longer commercial breaks when they are syndicated). I highly recommend them. Very nice transfers and some interesting extras too (for those who care about extras). The only criticism I have thus far (I've watched the first couple of discs and three episodes of disc three) is that they didn't have both versions of that early episode they shot two times that had two different actors playing Jerry's dad (both of whom were only featured in that one episode). I actually preferred the actor they don't have on the DVD version. Maybe it's on an easter egg, who knows.

The picture quality is superb, the audio quality is good if a little boosted in the upper mids (not a big deal but....), the quality of the extras is pretty damn good and of course the quality of the shows themselves is unsurpassed.
Buy them immediately - you won't be dissapointed :).
