Harry Nilson's version of Without You. Even though I love Badfinger even they liked it better.

Dave Edmunds cover of John Fogerty's Almost Saturday Night.

Dave Edmunds cover of Brian Hyland's Warmed Over Kisses (Left Over Love). [close call on this one though]

I've got to go with Hendrix's version of All Along the Watchtower, too. It is just fantastic!

Almost any Bob Dylan song that was covered. :D Just to name a few:

Mr. Tambourine Man (The Byrds)
My Back Pages (The Byrds)
I Shall Be Released (The Band)
All Along The Watch Tower (Jimi Hendrix)
Blowing In The Wind (Joan Baez, Peter Paul & Mary, ...)
Forever Young (Joan Baez, ...)
If Not For You (Olivia Newton-John)

No knock on old Zimmerman but he's so much better a songwriter than singer.
