The already mentioned Bullitt & Vanishing Point are classics. Some others I enjoy are American Graffiti, Grand Prix, Thunder Road, Mad Max and although animated, Cars is pretty darn skippy.
"Grand Prix" is arguably the greatest racing film ever done. Of course, this has been mentioned here before.

This is a good thread, too! Thanks for that! "Bullitt" was fantastic, with more than likely, the greatest chase scene ever filmed. Of course, "Ronin" (also directed by John Frankenheimer - director of "Grand Prix"), featured a wonderful chase scene. Actually; the camera mounts used in "Grand Prix", were again, used in "Ronin".
"Vanishing Point" was nuts! I'll never forget that! Bulldozer - 1, Challenger - 0.
I certainly remember, "Hot Rods to Hell". :) Also; one of my favorites as a kid was, "The Lively Set" with James Darren, and Pamela Tiffin.

"The Gumball Rally", and "The Cannonball Run" movies were a conglomeration of the actual, Cannonball Baker Sea-To-Shining-Sea Memorial Trophy Dash, that took place a few years from NYC to California.
